-200g bread flour
-50g wheat starch
-1 tsp baking soda
-3/4 tsp alum
-160g water
-1/2 tsp salt
What to Do:
Mix together flour and starch. Stir together alum, soda, salt and water. Add water mixture to flour mixture. Knead to make a smooth dough. Rest for 30 mins, shape and fry. Makes about 5, 8" long yck's.

i found powdered alum by Mccormick, the tiny bottle costs 2.87- expensive?

2.87 is not that bad, its about 3-4 bucks here.

I was wondering if you use the powdered alum, or if you crush up your own? I bought some from the asian store where it looks like a giant piece of crystal, and it's labeled white alum, and I'm assuming you have to crush it yourself?

I use powdered alum from the american grocery stores.
Spice Trend alum works just as good. I found it for $1.25 at the grocery store, right next to the McCormicks that was $3.89.
May I know what is alum? Where can I get it from. Thanks

I love your food blog..thanks for posting YCK. A friend of my gave me this recipe using 1 1/2 tbsp of Calumet Baking Powder, 3lbs flour, 2 cup of Milk & hot Tab Water, 1/2 tsp salt, sugar and veg oil.
Is it possible to use only all purpose flour? I could not find any wheat starch at all. There is wheat flour but I do not think they are the same.
