Ingredients:
-2 whole eggs + 1 yolk
-200g flour
-100g wheat starch
-1/2 tsp baking soda
-200g (ml) club soda
-250g sugar

What to Do:
Beat egg whites until stiff; add in yolks one at a time. Add sugar and baking soda and beat until thick and creamy (about 10-15mins). Add flour and club soda and mix to make a smooth batter. Steam on high for about 10 -15 mins.

Note:
This recipe is a modified version of hugbear’s recipe posted in Nurkochen. The recipe is modified to not use sponge stabilizer as it’s not available in the U.S.

Should we use all purpose flour to make these? Also, to have the crack effect, should we cut the top 3/4 way through steaming it?
Thanks for sharing. Loved how yours turn out. I'm crossing my finger hoping mine will turn out the same! :) I think this is the banh bo I was talking about. Maybe it is called Banh thuan after all. :)

just follow the instructions and don't be afraid of failure. Play with your food, if you think cutting the cakes 3/4 way through steaming it will help... then do it.

What's the purpose of adding club soda? Also when I tried making these cup cakes, the smell of eggs is very strong, is there a way to get rid of the smell? Add coconut milk? Vanilla essence?

no need to cut halfway,grandma used to sprinkle the granulated sugar carefully forming an "X" on the ready batter.during steaming the cakes will crack
