Ingredients:
-230g sugar
-150g rice flour
-150g tapioca starch
-300g coconut milk
-2 eggs (100g)
-1/2 tsp cinnamon (optional)

What to Do:
Beat eggs with sugar until creamy and lemon colored. Mix together flours with coconut milk, add flour mixture to egg mixture and mix well. Bake in love letter or pizzelle moulds until golden.

If making Bánh Quế, roll cookies while still warm. If making Bánh Kẹp, fold cookie into fourths while still warm.

Hello,

1) I haven't tried making Vietnamese Love Letters yet.

I am curious to know whether these love letters are the same with the Malaysian version?

Depending on who makes them, the Malaysian love letters that are delicious has more
coconut milk and eggs in them. The normal ones taste of flour which is pretty flat.

2) I just came back from Loa. I sampled a light street snack which has a similar taste to love letter. If I am not wrong, it maybe made of of tapioca, coconut shreds or coconut milk and eggs. It taste heavenly.

Love letters, when unbaked comes in a batter, while this particular "cracker" comes in form of a disc.

To cook it , one just has to warm it over hot charcoal and it will harden. Then it is ready for eating.

I wonder if you know of this snack and how to make it.
