Ingredients:
-1/2 cup tapioca starch
-1/2 cup rice flour
-1/2 cup sugar
-1 ¾ cups water
-4-5 bananas
-yellow coloring

*Mix together flours, sugar, and coloring in water until dissolved. Peel and slice bananas. Grease a baking pan, and ladle in about 4 tbs of ‘batter’ then arrange a layer of bananas. Steam for about 5 mins and add more batter to cover the bananas. Steam again until the batter is clear. Cool and cut into small pieces. Serve with coconut sauce and toasted sesame seeds. Makes about 2 cakes, each cake is about 1/2 inch thick (cakes shouldn't be too thick).

For the Coconut Sauce:
-1 can coconut milk (400ml)
-1 tbs tapioca starch
-2 tbs sugar
-1/3 tsp salt

*Stir everything together over medium heat until mixture thickens.

Hi TT,

I tried this recipe of yours as it looked very yummy but mine didn't turn out like yours. When I steam it, it seems like nothing mix together and there's about 1/4 part on the top, just plain water. It is not water from the steaming lid as I open the lid every 5 minutes to let out all the steams.

What do you suggest I should do?

I did the banh bo again, and this time, a success! Lots of honeycomb! Thank you so much, it taste very good!!

what do you mean by "1/4 part on top, just plain water" and "nothing mix together"?

The reciepes worked but I did not use the full 1 and 3/4 of water and it turned out fine. I think the reason yours did not mixed together could be the fact you did not let it cook longer. The five minutes cooking time suggested is too little time. Try leaving it for 15minutes instead or a little longer. It should be fine.I only used 1 cup of water. The result is the banana cake had a chewy texture which I like.

I tried this recipe and it came out great! I read the comments and tweaked it a little bit. I did only add 1 cup of water and steamed it for 15 mintues and it came out great!!

Hello TT,

Is there a special banana to be used in this recipe?

michelle,

traditionally...in vietnam... chuoi su (thai bananas) are used, however, they can be hard to find and/or costly outside of Asia. Plantains or "chiquita" bananas are suitable replacements.
